Pumpkin Soup

Yes, I’m still taking the most out of pumpkin season. This time a simple pumpkin soup. I know you can do this soup all sorts of ways. Spicy or sweet, with coconut milk or cream. And it’s all great but this time I decided to go for most pumpkin taste I can get out of a pumpkin :) It’s very easy and you can prepare it so fast. You may think it’s not going to turn out anything special but if you like pumpkin I’m sure this soup will make you happy.

Ingredients:

  • 1 medium onion
  • nutmeg, cumin, coriander
  • 1 tablespoon honey
  • 300 gr pumpkin
  • salt and pepper
  • around 3-4 cups of water

Preparation:

Peel, de-seed and cut your pumpkin into smaller chunks. Chop the onion and fry until soft on olive oil, then add the chopped pumpkin and all your spices. Add water – here quantity is not very specific – we don’t want too much water but just enough to cover the pumpkin and let it cook. Cover and simmer for 20-25 minutes. At this point taste your soup and add honey and other spices if you think it needs some. Usually I add more salt here as I don’t salt it a lot in the beginning. Blend your soup and serve with a spash of cream or coconut milk in the middle. It’s yummy and a little bit sweet.
