Sififit – Bulgur Köftesi

These are yummy lamb koftes. I got this recipe from my mother-in-law although I add less koftelik bulgur. The portions of meat and bulgur should be 1:1 and then koftes are much more crunchy.


  • 2 onions (minced)
  • 500 gr double mince lamb
  • 2 cups koftelik bulgur
  • 1 teaspoon salt
  • 3 spoons pepper paste
  • 1 teaspoon cumin
  • black pepper to taste


Cover the koftelik bulgur with hot water and wait around 15 minutes or until koftelik absorbs all the water. Add pepper paste, salt and cumin and mix well. Pre heat the oven to 200C and prepare your baking tray. Pour in some hot water to the bottom of your tray, not too much, just enough so it steams in the oven and keeps the koftes moist. Add minced meat and grated onion to the koftelik mixture. Onion should be grated on the smallest slots into a mash (or to make your work easier – blitzed in the blender into a pulp). Now mix everything well with your hand as if kneading.

sififit momForm small balls and flatten them. Line them up on a hot grilling tray situated above the water tray. Bake around 15-20 minutes on each side (flip once). The time of baking will depend on the thickness of your sififit. Mine are around 1-1,5 cm thick.
