Baked Eggplant


This is a great recipe for the perfect baked eggplant. You can eat it as simple side dish or turn it into many yummy dishes. For example Babaganus or Ali Nazik. Recipe found here.


  • 4 eggplants
  • salt to taste
  • olive oil


Wash and slice the eggplants in half lengthwise. Score it from the inside and salt. Let it rest for 15 minutes then dry with paper towel. Prepare a baking tray lined with baking paper. Put the eggplants cut side down and slightly smear the skin side with olive oil. Put in a pre-heated oven and bake at 200C for 45-50 minutes. Eggplant prepared this way is really soft and delicious and peels easily.
